Annatto seeds grow on the achiote tree, also known as the lipstick tree, in Central and South America. Through globalization, these seeds made their way into Vietnamese and Filipino cuisines for rice, soups, stews, or sauces. In the food industry, annatto seeds are used as natural food coloring for foods like cheese and vegan butter.

Ingredients

  • ½ cup [120 ml] neutral oil
  • 2 Tbsp annatto seeds

Method

In a small saucepan over medium heat, heat the oil and annatto seeds for 3 to 5 minutes, stirring occasionally. Take care not to let the seeds burn or the oil will become bitter. Remove the pan from the heat and let cool completely. Strain and discard the seeds. Store the oil in an airtight container at room temperature for up to 1 month or refrigerate for up to 6 months.
