Chef Wong Wing Chee of Lei Garden created this Hong Kong dessert soup in 1984 when the restaurant chain was opening a branch in Singapore and wanted to highlight the city’s local ingredients. It was so refreshing and thirst-quenching that Chef Wong named it “Willow Dew Branch,” inspired by the legend of Guan Yin, the goddess of compassion, who used the dew from a willow branch to perform miracles.
