My maternal great-grandmother always had cooks, but on occasion, she liked to get in the kitchen herself and make a delicious curry using paste from a local shop. This paste is based on a recipe from Mama Wong (my college bestie’s mom), which she learned in Hong Kong in the 1960s from an Indian neighbor. Eating this brought me back to my childhood and to my paternal grandmother’s Hong Kong Curry. Use this paste for Singapore
