Thai curry pastes are made of a mixture of fresh chilies and various spices. The yellow paste derives its color from turmeric, which is also known as curcumin. Fresh chili peppers impart flavor and fire. You can add more or less, or a milder or spicier variety, depending on how hot you like it. It’s the white membranes inside the chili that contain the capsaicin that produces the heat. For a milder curry paste, remove the membranes.
