Striking red in color, this vegetable is sweet and earthy in flavor. These sweet-and-sour beets are a great side with spicy Asian dishes. Rice vinegar is sweeter and milder than natural or wine vinegar, but if you can’t find it you can certainly use these other varieties. Feel free to add extra sugar or ginger syrup to taste.
