Fresh noodles are so much better than dried ones, but not always readily available. The solution? Make your own! That way you can also make them as thick as you like. When served with some stir-fried vegetables and a simple sauce, the flavor of the noodles really comes into its own.
PLACE the flour in a bowl along with ½ teaspoon salt, the sesame oil, and the beet juice, and mix together using 2 chopsticks. Continue kneading by hand until the dough is smooth. Add a little more water if the dough seems too dry, or a little more flour if the dough is sticky. Wrap the dough in plastic wrap and allow it to rest for 10 minutes.
