Mashed potatoes and beets with goat cheese and beer-soaked raisins— it's the Netherlands on a plate. These days, instead of wine, I like to add a splash of beer to my dishes. It gives a nice hint of bitterness. Port wine also works well with beets and goat cheese.
HEAT the beer in a saucepan along with the brown sugar and cinnamon. Remove the pan from the heat and add the raisins. Cover and allow the raisins to swell for at least 30 minutes.
PEEL the potatoes and cut them into 1-inch (2-cm) pieces.
