Hasselback is a method of cutting slits into potatoes to create very thin slices that are still connected, which then fan out while roasting in the oven. It’s a simple idea, which originated in Scandinavia. Sweet potatoes, butternut squash, and beets also lend themselves well to this preparation. The thinner the slices, the prettier the end result.
