Are you having guests over for dinner? This curry with wedges of pointed cabbage is sure to be a showstopper. The coconut milk adds a touch of sweetness and makes it all soft and creamy. Serve with naan bread or basmati rice.

Ingredients

  • 1 small pointed sweetheart or hispi cabbage (about pounds/800 grams)

Method

REMOVE any unattractive outer leaves from the pointed cabbage. Cut the cabbage (lengthwise) into 4 or 6 wedges. Remove the hard core, but make sure that the wedges remain intact.

HEAT 2 tablespoons oil in a large sauté pan. Fry the cabbage wedges for 2–3 minutes per side until nicely browned. Meanwhile, finely chop the onion.

REMOVE the cabbage from the pan.
