On a cold winter’s day, there’s nothing better than a hearty sauerkraut casserole. A generous layer of sauerkraut covered with fluffy mashed potatoes and topped with cheese, baked in the oven. The combination of sauerkraut with red wine, apple, and thyme is one of my favorites.
