Take your time to shape the balls and, if possible, leave them to firm up in the refrigerator for a few hours. Once the prep is done, you’ll have this dish on the table in a flash. Fried in a bit of olive oil, they’re a great alternative to meatballs.
DRAIN the chickpeas well. In the food processor, process the chickpeas with the cherry tomatoes until finely ground (or do this in 2 batches in the chopper).
TRANSFER the chickpea mixture to a bowl. Mix in the dried breadcrumbs and season with salt and pepper.
