This creamy bean purée is great when you fancy a change from mashed potatoes. I like it best when it’s silky smooth and still a bit liquid. If the purée is too thick to your liking, you can add some extra wine or water.
RINSE the beans in a sieve and allow them to drain well. Mince the garlic.
HEAT the olive oil in a frying pan. Fry the garlic for 1 minute. Stir in the beans. Pour in the wine and gently heat the beans for 5 minutes until they’re hot.
SPOON the beans into the food processor or tall measuring cup along with the cooking liquid. Process into a smooth purée.
