I feel Swiss chard is an underrated vegetable and perhaps not as popular as it should be. Both the leaves and the colorful stalks can be used in all kinds of recipes. I like to use chard in mashed potato dishes. If you don’t overcook the chard, it adds a nice bit of crunch.

Ingredients

  • 3⅓ pounds ( kilos) starchy potatoes

Method

PEEL the potatoes and cut them into pieces. Cook the potatoes in salted water for 20 minutes until done.

CLEAN the Swiss chard and chop very coarsely. Clean the mushrooms with a brush and cut them into pieces. Mince the garlic.

MELT 2 tablespoons butter in a large frying pan. Stir in the chard and cook for 6–8 minutes until crisp-tender or completely tender,
