Belgian endive used to be extremely bitter, which is why recipes often called for the addition of something sweet. Today’s endive varieties are much milder, but I still like a touch of sweetness, especially in combination with the bitter note of the beer.
CUT a thin slice off the bottom of the heads of Belgian endive and cut the heads in half.
MELT the butter in a large frying pan. Fry the Belgian endive for 5 minutes until browned on both sides.
DRIZZLE the honey over the halves. Pour in the beer and add the thyme sprigs. Bring to a boil.
TURN down the heat to low and braise the Belgian endive
