Romano peppers are ideal for stuffing and grilling on the barbecue. These are filled with marinated feta, but couscous or rice, roasted vegetables and mozzarella, or a mix of spinach, ricotta, and grated Parmesan work well, too. In bad weather, you can grill the peppers in a grill pan or broil them in the oven until soft.

Ingredients

  • 4 good-sized red Romano (sweet pointed) peppers
  • 6 ounces (200 grams) feta cheese

Method

SLIT the side of the peppers and carefully remove the seeds and membrane.

BREAK the feta into chunks. Scrub the lemon and grate off half of the yellow zest. Strip the leaves from 4 thyme sprigs.

STIR the olive oil into the feta along with the lemon zest and thyme leaves. Fill the peppers with the marinated feta.
