Creamy Leeks with Mustard and Comté

Like onions, leeks can be used in just about everything but are rarely given a starring role. This casserole really captures their sweet and delicate flavor and gives the leek its long-awaited moment in the limelight. Comté has a similarly mild and almost sweet, nutty flavor. This popular cheese originates in eastern France and is made from raw milk. Serve the leeks with pan-fried or roast potatoes.
