Chuqandar tamatar is my all-time favourite vegan recipe. I didn’t particularly appreciate eating vegetables as a kid, so, Ammi played a little trick on me. I fell in her trap and fell in love with this beetroot and tomato recipe.
Ammi sold the idea of eating this dish to me by saying that it will turn my cheeks pink. It was much later in life when I figured that it was blush and not beetroot behind rosy cheeks. I love to eat this dish with plain boiled rice.
