Aaloo ka bhurta is a simple and delicious family recipe. It is a desi (local) way of cooking mashed potatoes. Our family enjoys it served with simple masoor daal and chapati.
Boil and mash the potatoes.
Fry onions until they are golden-brown, then add the potatoes.
Add salt, spring onions, coriander leaves, and green chillies.
Fry for a few minutes until the oil separates (bhunai).
