This recipe of matar pulao can be used to make mixed vegetable pulao as well. You can add mixed vegetables such as carrots, corn, potato, French beans, and peas, instead of peas as a stand-alone vegetable. I often use a frozen, precut vegetable mix to make this quick and simple rice dish for ease.

Ammi always serves matar pulao with shami kebabs and raita. It is still one of my favourite combinations.
