Gaajar ka halwa is a very famous and loved traditional carrot dessert. It is essentially a winter dessert, as carrots are a winter crop in the Indian subcontinent.
Boil carrots in milk, and cook covered on medium heat until half the liquid evaporates.
Add sugar and cook until the liquid completely evaporates.
In a separate pan, add ghee and fry the green cardamoms.
Add to the cooked carrots and fry for another 20 minutes.
Add khoya, green cardamoms and fry until the oil separates (bhunai).
