Midweek, if my spirits are flagging, I might resort to an invigorating kick-start from a piece of sirloin, cooked nice and rare. With it I like a good dollop of my own secret steak sauce. Not so secret now, I guess.

Ingredients

  • 2 sirloin steaks
  • unsalted butter or sunflower oil
  • fried potatoes (optional)
  • flaked sea salt

Method

  1. Combine all the ingredients for the sauce in a bowl and mix them together thoroughly. Loosen with a tiny splash of water.
  2. Get a frying pan nice and hot, add a little butter or sunflower oil and lay in the steaks - they should sizzle immediately. Season the side facing you with sea salt before flipping the steaks over.
  3. Cook the steaks how you like them
