Varying combinations of garlic, some sweetness and tomato, dusted over with smoky chillies, always deliver. It’s a kind of swanky barbecue-saucy affair that can be thrown together in minutes. Summer outdoors food.

Ingredients

  • 100 g unsalted butter
  • 1 medium onion, finely chopped
  • 4 fat cloves

Method

  1. Melt the butter in a saucepan and gently sauté the onion for about 12-15 minutes, until meltingly soft and certainly golden but not brown.
  2. Add the garlic for the last couple of minutes, stirring regularly until the garlic is tender but not burnt. Add the cloves and chipotle chilli powder or paste, stirring for around 30 seconds.
  3. Flop in the tomato pur
