I fish for trout a lot and like to enjoy them in many different ways in order to avoid boredom. That, I guess, is seasonal cooking anyway. This is so easy to make and could be done by the riverside while fishing or camping, although I’d probably make the lentils at home. If you do cook the fish outdoors, poach it and experience the wonderful effect of preparing it ‘au bleu’. Drop a small, simply gutted and de-gilled trout that you have only just before knocked on the head into simmer
