Citrus-marinated sea bass with charred spring onions

I made this for a photo shoot in winter on a South African beach, where the day before a fishing boat had been overturned and washed up, sadly with one hand lost. It was still there, upside down. Strewn about lay some of the uncollected catch, with most of these fish missing chunks from shark bites.
