Sardines with sweet-and-sour onions on sourdough

Name: Sardines with sweet-and-sour onions on sourdough
Yield: Serves 2
Ingredients: fresh marjoram or mint; 1 tablespoon toasted pine nuts; 2 cloves of garlic, very thinly sliced; 2 medium sardines, scaled, filleted and patted dry; 1 bay leaf; 2 tablespoons white wine vinegar; 2 tablespoons sultanas, rehydrated with a little hot water; ½ teaspoon flaked sea salt, plus extra for seasoning; 2½ teaspoons caster sugar; 2 large slices of sourdough bread; a scratch of zest from an unwaxed lemon; ground black pepper; a pinch of dried chilli flakes; 1 tablespoon fresh thyme leaves; 2 medium onions, halved and very finely sliced; 3½ tablespoons extra virgin olive oil; 5 g Parmesan cheese, finely grated; 1 tablespoon fresh lemon juice

Originally I developed this recipe as a pizza for Pizza Express, but it did not make it to the pizzaiolo’s marble slab. It was truly delicious, but decidedly a little too left-field for their market. I moved it on to bread and it has become one of my favourite staples at home. If you are making a pizza dough, please try it like this too.
