This vital little salad came about purely through wonky logic. The main ingredients are the same kind of colour, they both have a sweetness, blackcurrants have a tartness the beetroot needs, they grow next to each other in my garden. There’s nothing more pleasing than a successful hunch. The dressing calls for an ingredient I have been less than kind about - balsamic vinegar. I feel it is carelessly splashed about on everything in an unwelcome tide that floods the deli counters and kitchens
