The southern Italian dish caponata has many variations, as one would expect from a region where almost every family is blessed with good cooks. Delicious eaten outside on a hot day and pushed on to some bread with a fork, it is also a wonderful accompaniment to lamb, goat, chicken or fish cooked over charcoal.
