This is not a recipe - in fact it’s the kind of thing that, if I found it in another cookbook, would probably give me a very physical feeling of being swizzled. But!... I must put it in, as it is totally delicious.

Make sure you wash the sweet potato skins - they are good and should be eaten.


  • 2 large sweet potatoes
  • a generous pinch of flaked sea salt
  • tablespoons
