This is a wonderful way to deal with a glut of tomatoes, and the result is utterly delicious. They crop up through the book in a couple of other recipes (Roast Chicken, Tomato and Celeriac Remoulade Sandwich, and Tomato and Goats’ Cheese Salad). The residual tomato oil from the jars is fabulous in dressings and for storing olives in. Excellent in sandwiches, the tomatoes are also delicious eaten with anchovies and capers,
