Again and again I will say it - STOP topping and tailing your French beans! Certainly the stem end needs to come off, but the nose (which I presume is the tail) is only bean, after all, and looks better left on than cut off. Its removal is pointless and wasteful.

All herbs of the delicate variety can go into this salad, be they dill, basil, marjoram, mint, chervil, chives, parsley, tarragon, lovage or coriander (although I tend not to use the latter). Don’t go overboard if you use l
