Passion fruit ice Cream

Passion fruits are something I never remember to eat enough of, but I have a clear memory of buying a crammed binliner full of them on the side of a motorway in Kenya for the equivalent of 40p in 1995. I can only imagine the astonished face of the seller if I’d told him what a single passion fruit would cost at home. This ice cream is for special occasions as the fruits are expensive.

I leave a quarter of the seeds in the juice, as I like the crunch.
