I love this tender shoulder for juicy pork sandwiches; adding some pickled jalapeño, cilantro, and basil, and putting it all on a warm crunchy roll makes it taste great at any time of day. This is a really basic dry rub that’s great for slow-roasting any protein, but it’s especially spectacular with pork shoulder. Keeping the skin on gives us the crispy, crunchy texture we all crave—it gives me goose bumps just thinking about it!
