Smashed chickpeas, crunchy celery, pretty peas, and a sunlit curry mayo combine in a flash for a legume-based variation of the traditional egg or chicken salads. A hefty serving of this on top of a bed of spring greens is all that’s required to make it come to life. However, if you want to think outside of the bowl, this salad is wonderful in a wrap or sandwiched with a fat slice of tomato between toasted seed bread.
