Instead of the classic brick-red muhammara, this one is gorgeously canary colored. The sticky-smooth texture comes from syrupy, slightly sour dried apricots, lending a new base to the traditional Syrian recipe. It’s a hearty paste that speaks to the bold, assertive flavors more of us are warming up to as weeknight staples.

Ingredients

  • 1 yellow bell pepper, halved and seeded
  • 1 clove garlic
  • 1 cup

Method

Preheat oven to 400°F. Line a medium-rimmed baking sheet or square pan with parchment paper. Place pepper skin-side up on parchment. Roast for 30 minutes
