I love making this salad when I’m craving something light, quick and fresh. It is a very simple salad, but sometimes that’s all you want, a fresh and delicious bowl of greens. For a cheeky punch of flavour and colour, add roasted butternut.

Ingredients

Salad

  • 1 handful baby spinach
  • 1 handful rocket
  • ½ cup thinly sliced red cabbage
  • 1 avocado, sliced
  • 250 grams tender-stem broccoli, blanched
  • 1 handful sugar snaps peas, thinly sliced
  • ¼ cup pumpkin seeds
  • salt and pepper

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Method

Create a meal that is not only deliciously healthy, but also visually beautiful, by layering all the ingredients for this salad in a large salad bowl.

First, form a base with the spinach and rocket leaves. Then, stack the cabbage, avocado, broccoli and sugar snap peas. Top it off with a sprinkle of pumpkin seeds, dress the salad with olive oil and apple cider vinegar, and season to taste.
