Add the coconut oil and onion to a large saucepan over medium heat and fry until translucent. Add the garlic, ginger, chilli and cayenne pepper. Keep stirring. Add the celery and stir until it starts to soften. Then add the carrot, sweet potato and butternut.
Once all the vegetables are mixed together, add the stock and top up with boiling water until the vegetables are covered. Simmer
