This bowl is filled to the brim with beautiful, earthy flavours. I absolutely love truffle oil and believe that mushrooms are the diamonds of the kitchen, which is how the name of my blog, The Truffle Journal, came about.
Place the cauliflower, courgettes and mushrooms on a large roasting tray. Don’t cut the mushrooms too small as they will get lost among the other vegetables and lose flavour. Mix in the thyme and coconut oil and season to taste. Toss all the ingredie
