What I love about this meal is that you and your friends can get very involved in the eating experience and eat with your hands.

You can easily turn this into a mezze feast by adding other elements such as dolmades and roasted red peppers.


  • 2 cups fresh parsley leaves, finely chopped
  • 150 grams rosa tomatoes, halved
  • ½


Add all the falafel ingredients, except the coconut oil, to a food processor and blend until chunky. You still want little pieces of chickpea and parsley showing. If it gets stuck, add a dash of olive oil to help it along. Once ready, place in a bowl in the fridge for 30 minutes.
