You can’t go wrong with roasted vegetables, falafel and hummus. It’s one of my favourite dishes and many of my friends agree. I hope you do too!

Ingredients

  • 6 medium-sized carrots, sliced
  • 1 head cauliflower, broken into florets
  • 2 tablespoons

Method

Preheat the oven to 180 °C.

Keep the oven on for the duration of this recipe as you are going to use it later for the falafels.
