Recipes for garlic soup are found throughout Spain and southern France. This version comes from the central plateau in Spain where I first consumed a large bowlful, piping hot, when a friend and I arrived at the posada in Avila after driving through a blizzard. On the rest of that chilly trip we had garlic soup every day for lunch.
