This Turkish soup of yogurt and rice, flavoured with mint, is a staple of the Anatolian plateau. Its Turkish name, yayla çorbasi, means plateau soup. I have eaten it there in bitter mid-winter and it certainly revives body and spirit. Turks never eat anything without lots of bread, and this soup is no exception, so put a basket of warmed Turkish flatbread on the table as well and you have a satisfying simple meal.
The soup can be made with meat or chicken stock or with water.
