Grilled aubergines are simple and quick to prepare and can be topped with a variety of mixtures and sauces. In addition to the suggestions in the recipe, try coriander leaves, green chilli and ginger all chopped into thick plain yogurt, or grilled, chopped red pepper mixed with chopped anchovy, parsley and black olives. Tomato or red pepper chutney is another possibility.
