This is a very popular Portuguese dish, and one which has many interpretations. Mine is a fairly plain version, because I like the flavours of the rice and chicken together without other intrusions, but, if you wish, you can add red or green peppers, cut into squares, mushrooms, chouriço (Portuguese spicy sausage) or flavour the rice with saffron.
