Hortobágy pancakes

This wonderfully filling dish originates from the Hortobágy Puszta, the vast plains of eastern Hungary. I used to eat it at the Gay Hussar restaurant in Soho, where it was one of my favourite dishes. Until I found myself travelling from Budapest to the eastern city of Debrecen — in order to inspect a new paperback printing press, with which the Hungarians hoped my employers, Penguin Books, would place orders — I was ignorant about its origins. As an editor, not a production manager, I had n
