Hare is at its best during the autumn and winter months, when it is often available at farmers’ markets as well as from game suppliers and some butchers. It can sometimes be bought jointed and pre-packed, but a butcher will joint a whole animal for you. The meat is lean, savoury and dark in colour. Several hours in a marinade will enhance its flavour and tenderness.
