In all cold climates the sweet, earthy flavours of winter vegetables are enjoyed in warming stews. Celeriac, swedes, turnips, carrots, salsify, leeks, parsnips and potatoes, seasoned with spices and winter herbs and simmered in stock or a tomato broth, blend harmoniously to make a rich, satisfying meal. Any of these vegetables can replace the ones given in this recipe.
