We are familiar with Italian pasta and Asian noodles, but tend to know little about pasta in other cuisines. Spain has several good pasta dishes, many of which have been reinterpreted in Latin America. Spanish fideos, which are short lengths of spaghetti-like pasta, often form part of a substantial dish, as here, rather than being served as pasta with a sauce.
