Pimentón is Spanish paprika. Most comes from La Vera and carries a denomination of origin which guarantees a high-quality paprika with a smoky aroma and taste. It may be hot, sweet or bitter-sweet. In this dish, pimentón dulce, the sweet version, complements the flavour of the morels and spinach beautifully. If you use the hot version, use a little less.
