This is a version of a common Thai dish that is also made with pork or chicken, and when made there uses many more chillies. Make sure to shred the lime leaves very finely or they are impossible to eat; if you can’t, it is better to leave them in large pieces and remove them before serving.

Ingredients

  • 250 g egg noodles
  • 2 tablespoons sunflower oil
  • 3 cloves

Method

Cook the egg noodles in a big pan of boiling water until just tender, about 3–4 minutes. Drain, rinse under cold water and set aside.
