If you can’t get slender stalks of broccolini, buy a head of calabrese and cut it into florets.
Heat a wok over a high heat and when it is very hot pour in the oil. Swirl to coat the sides and add the garlic and chilli. Toss as they start to colour and put in the broccolini. Stir-fry vigorously for 2–3 minutes and add the stock or water and a little salt. Shake the wok and stir until the broccolini is just cooked, a further 2–3 minutes.
